Couscous grains cooking

  Preparation

According to the recipe indications, water, broth or a sauce is put into a couscous-cooking pot and is brought to the boil over a brisk fire. As the liquid begins boiling, the couscousis sprinkled with some water and put into an adequate couscous-maker (kiskas) without packing the grains down. The ouscous-maker, then, is fitted to the pot and the couscous maker.fire is brought down and the couscous is left steaming for 20 minutes. After that, it's emptied into a tray, sprinkled with some fresh water and the lumps are taken down with a wooden spoon , in order to aerate all the mass and separate out the rains from each other. The couscous is, then put back into the couscous-maker and the first stage is repeated for the second time (steaming) with aerating it at the end, then it is used according the recipe indications
