Combined tunisian salad (slata tunisia hliqs)

- tomatoes : 250g
- ripe capcicums : 200g
- apple : one
- cucumber : 200g
- eggs : 2
- parsley : 50g
- oil : 4 tablespoonfuls
- celery : 50g
- vinegar : 2 tablespoonfuls
- black olives : 50g
- pepper : ½ tablespoonful
- salty anchovy : 50g
- table salt : according to taste

hard tomatoes are cut into thin slices ( in the
direction of the equator) and peeled, the sarne thing for
a ripe onion. The slices are, then, taken down to rings, and
the same thing is done for the capsicums. Smalt sized cucumbers
are scraped, cut into thin slices and peeled. The apple is
cored using an apple corer, and cut into thin slices, too,
2 hard boiled eggs are sliced, the egg white rings are left
as they are whereas the egg yolks are crumbled. After that
the olives are stoned, parsley and celery are sorted out and
chopped. The salty anchovies are cleaned,peeled and crumbled.oil
and vinegar are beaten up, separately with salt and pepper
(according to taste), in order to make an oil and vinegar
dressing.
Serving : the vegetables cut into rounds or rings as well
as those of the apple. The egg whites are lined up in a dish,
over which the anchovies and egg yolks crumbs are scattered
as well as the chopped parsely and celery. The salad, is then,
garnished with the olives, sprinkled finally with the oil
and vinegar dressing and served.
