Chick pea graiba

250g ground chickpea
80g flour
100g icing sugar
150g butter
1 soup spoon vegetable oil

In a casserole on gentle fire, the
butter is cooked until it gets the colour of hazelnuts (the
foams should be eliminated) the ground chickpea, the flour,
the icing sugar sieved separately, then mixed together in
a bowl. the melted butter is added the paste is kned with
hands until it is quite homogenous and crumbly. it is kept
warm by gently kneading it between the hand palms. the paste
is then shaped in the forms of sausages and rolled over until
it is longer with a diameter of 15 millimeters. with a knife
it is cut in the bias into 5.5 cm long pieces. the pieces
are aligned in a tray, left to rest in the refrigerator for
30 mns. hey are cooked in a 130°c hot oven a period of
15 to 20mns. they are served cold.
